Blackberry Limeade Recipe

I was waiting for the perfect day to give this blackberry limeade recipe a try. Time and again, bundled in blankets on fog shrouded San Francisco afternoons, I'd whine to Wayne that we should move somewhere with a proper summer. Visions of my hand wrapped around a frosty glass of a jeweled-toned refresher like this occupied a disproportionate amount of my daydreams. No more. With temperatures roaring well past 90 degrees in San Francisco on Friday, I got my perfect summer day - and with a bit of help from Martha Hall Foose (executive chef of the Viking Cooking School), I took full advantage. The recipe is from her eloquently written new cookbook, Screen Doors and Sweet Tea: Recipes and Tales from a Southern Cook.

Cookbooks writers and enthusiasts listen up - Martha is a master of the head note. Hers are some of the most alluring, informative, and transporting lead-ins to recipes I've read. This one precedes the recipe for Cantaloupe Daiquiris...

The hottest I have ever been in my life was at 5:45 P.M., on August 29, 1998, on the no. 923 St. Charles Avenue streetcar in New Orleans. I had been working down in the French Quarter as a pastry chef for Susan Spicer's Bayona. Some days the unique commute felt like the scene in a movie. After rattling down the boulevards, and immediately upon entering our uptown digs, I stripped down and stood in the shower with only cold water running. I could almost hear the sizzle on contact. I really felt as if I had been braised.

The courtyards of New Orleans offer a haven from the heat. Shaded and mossy, planted with sweet-smelling Confederate Jasmine, they're like Mrs. Venable's arboretum in Suddenly Last Summer. She had her trusty secretary deliver a daiquiri every day at five. The musky sweetness of the melon, married to the brightness of the basil and mint, suspended in an icy slurry, will cool an afternoon down to the slow simmer of twilight.

I'd be willing to bet you'd like to try that recipe as well. And that's how it goes with this book - the author skillfully unveiling glimpses of her life (and love) of the South through a lovely collection of recipes.

I know many of you come to my site for inspiration on the natural foods/veg-friendly fronts, so just be aware that this isn't really that kind of book. This is Southern cookbook with all the deep-fried, shortening-packed delicacies you can imagine. Lots of meat, plenty of seafood-based recipes. That being said, there are many great ideas that are easily adaptable. For example, there's a black-eyed pea cake that (minus the bacon) looks like a fresh twist on a veggie burger, a frozen cucumber salad that sounds fascinating, and multiple rice salads that could easily be done with any number of whole grains (or whole grain rice). Plenty to be inspired by.

One of the things I loved about the blackberry limeade recipe was Martha's use of raw sugar - it lends deep, complex level of sweetness that you just don't get with white sugar. It bridges the blackberries, lime, and cardamom wonderfully.

Blackberry Limeade Recipe

Martha's recipe calls for ginger ale as the mixer (delicious!). I don't drink much soda of any sort - it's just too sweet for me, so I did a second batch with sparkling water as the mixer- great for those of you avoiding soft drinks. For some it might make sense to keep the components separate (instead of combining everything in one pitcher - making it easy to mix each drink to order. This way each person can control their own level of flavor/sweetness. Martha also includes a side bar of helpful notes related to this recipe - berries can be pulsed briefly in a food processor and strained. Be careful not to crush the seeds, as this adds a dirty taste to the blackberries. You can freeze blackberries in ice cubes for a nice accessory to the drink. The sugar syrup can be transferred to a metal mixing bowl set in a bowl of ice to cool it down quickly. For a wonderful frozen cocktail, puree ice and a jigger of gin with the blackberry-lime mixture in a blender.

4 cups fresh blackberries, or unsweetened frozen blackberries, thawed, plus extra for garnish

1 cup turbinado sugar, natural cane sugar, or grated palm sugar
1 kaffir lime leaf, crushed, or 1 tablespoon grated lime zest
1 green cardamom pod, lightly crushed
1/2 cup fresh Key lime juice (about 8 -12 limes)
Thin lime slices, for garnish
2 cups ginger ale (hs note: or sparkling water)
Ice cubes

Lay a doubled piece of cheesecloth on a nonporous work area. (As the berries will stain a wide array of cutting surfaces and clothes, this may be best done outside or over newspaper and wearing an apron or smock.) Place the blackberries on top of the cheesecloth and gather into a bundle like a hobo sack. Hold the sack of berries over a glass, stainless steel, plastic, or ceramic bowl. Twist the top of the sack to squeeze the juice from the berries into the receptacle. (This will yield about 1 cup very strong, tart, dark juice.) Refrigerate the juice until needed; discard the purple mash.

In a small saucepan, combine the sugar, 1 cup water, the lime leaf, and the cardamom pod. bring to a boil. Simmer over low heat for 10 minutes, or until the mixture is reduced to a thin syrup. Remove the lime leaf and cardamom. Allow the sugar syrup to cool and then chill it.

In a 1-quart pitcher, combine the blackberry juice, sugar syrup, and lime juice. Stir to combine and then refrigerate until cold.

To serve, stir the ginger ale (or water) into the pitcher, fill glasses with ice, and pour in the blackberry limeade. Garnish with slices of lime.

Serves 8.

Edamame Dip

Ingredients

  • 12 ounces shelled, cooked, and cooled edamame, about 2 cups, recipe follows
  • 1/4 cup diced onion
  • 1/2 cup tightly packed fresh cilantro or parsley leaves
  • 1 large garlic clove, sliced
  • 1/4 cup freshly squeezed lime or lemon juice
  • 1 tablespoon brown miso
  • 1 teaspoon kosher salt
  • 1 teaspoon red chili paste
  • 1/4 teaspoon freshly ground black pepper
  • 5 tablespoons olive oil

Directions

Place the edamame, onion, cilantro, garlic, lime juice, miso, salt, chili paste and pepper into the bowl of a food processor and process for 15 seconds. Stop to scrape down the sides of the bowl and process for another 15 to 20 seconds. With the processor running, slowly drizzle in the olive oil. Once all of the oil has been added, stop, scrape down the bowl and then process another 5 to 10 seconds. Taste and adjust seasoning, as desired. Serve with chips or crackers. Store in an airtight container for up to 5 days.

Basic Edamame:

  • 1 pound edamame, fresh or frozen, in or out of shell
  • 1/4 cup water
  • Kosher salt, optional

Place the edamame and water into a large microwave-safe bowl. Microwave on high for 4 to 6 minutes. Drain any excess water and serve as is or salted.

Yield: 4 servings

Sweet Potato and Beet Chips with Garlic Rosemary Salt

Ingredients

  • 2 sweet potatoes
  • 2 beets
  • 1 garlic clove, minced
  • 1 teaspoon very finely minced fresh rosemary leaves
  • 2 tablespoons salt
  • 10 cups vegetable oil

Directions

Special Equipment: V-slicer or mandoline, deep-fry thermometer

Wash the vegetables and dry very well. Set aside.

In a small bowl combine the garlic, rosemary and salt. Set aside.

Warm the oil in a large pot over high heat to 350 degrees F.

Meanwhile, trim 1-inch off the end of each sweet potato. Using the V-slicer or mandoline, slice the sweet potatoes into very thin slices, about 1/8-inch thick. Trim 1-inch off the root end of the beets. Using the V-slicer or mandoline slice the beets into very thin slices, about 1/8-inch thick.

When the oil is hot add about a quarter of the sweet potato slices. Let fry until golden and the bubbling has almost completely subsided, about 2 to 3 minutes. Using a mesh sieve or slotted spoon remove the chips to a paper-towel-lined baking sheet. Sprinkle with some of the garlic, rosemary, and salt mixture. Continue with the remaining sweet potatoes.

Transfer to a serving plate.

Next, fry 1/4 of the beets. Let fry until curled at the edges and most of the bubbling has subsided, about 3 to 4 minutes. Transfer the beets to another paper-towel-lined baking sheet and sprinkle with salt mixture. Continue with the remaining beets. Let cool and transfer to a serving plate.

Wonton Wrappers

Wonton Wrappers Recipe
(
Makes about 3 dozen squares)

Ingredients :


1 large egg white

About 1/3 C water

1 C all-purpose flour

1/4 teaspoonful salt



Cooking Direction :


Combine the flour and salt
In the bowl of a standing mixer (or use a hand mixer)Add the egg white and mix with the paddle attachment over medium speed,
Slowly adding water until the dough forms a ball. (Use all the water if needed)
Continue beating the dough with the paddle for several minutes, or remove from the mixer to knead by hand.

Adjust the flour and/or water content by increments as necessary till it form a smooth elastic dough that isn’t sticky ).

Cut the dough into four equal parts and run through a pasta maker up to the thinnest setting, or roll out by hand using a liberal amount of bench flour.
Cut the sheets into roughly 3inch squares, and make sure they are well sprinkled with flour on both sides before stacking or overlapping to prevent them from melding together again.
Use immediately or cover for a short while with a damp towel to keep them from drying out.

Renaissance of Tuna Casserole

Ingredients

  • Salt
  • 1 pound fettuccine
  • 3 tablespoons extra-virgin olive oil, 3 turns of the pan
  • 4 cloves garlic, finely chopped
  • 1 small onion, chopped
  • 2 (6-ounce) cans Italian tuna in water or oil, drained
  • 1/2 cup tender sun-dried tomatoes, thinly sliced, available in small pouches in produce department
  • 1/2 cup dry white wine, a couple of turns of the pan
  • 1/2 cup heavy cream, a couple of turns of the pan
  • Black pepper
  • 1/2 cup frozen peas, a couple of handfuls
  • Couple handfuls grated Parmigiano-Reggiano
  • 1 cup fresh basil, about 20 leaves, shredded

Directions

Place pasta water on to boil. Salt water then add pasta and cook to al dente.

While pasta cooks, heat a deep skillet over medium heat with extra-virgin olive oil. Saute garlic and onions until tender, 4 to 5 minutes. Add tuna and sun-dried tomatoes and stir to heat through, another 1 to 2 minutes. Add wine and cook it down a minute then add cream and season sauce with salt and pepper. Toss hot pasta and peas with sauce and cheese. Serve on dinner plates and top with shredded basil.

Grilled Lemon Chicken Skewers with Satay Dip

Ingredients

  • 3/4 cup freshly squeezed lemon juice (4 lemons)
  • 3/4 cup good olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon minced fresh thyme leaves, or 1/2 teaspoon dried thyme
  • 2 pounds boneless chicken breasts, halved and skin removed
  • Satay Dip, recipe follows

Directions

Whisk together the lemon juice, olive oil, salt, pepper, and thyme. Pour over the chicken breasts in a nonreactive bowl. Cover and marinate in the refrigerator for 6 hours or overnight.

Heat a charcoal grill. Grill the chicken breasts for 10 minutes on each side, until just cooked through. Cool slightly and cut diagonally in 1/2-inch-thick slices. Skewer with wooden sticks and serve with Satay Dip.

Satay Dip:

1 tablespoon good olive oil

1 tablespoon dark sesame oil

2/3 cup small-diced red onion (1 small onion)

1 1/2 teaspoons minced garlic (2 cloves)

1 1/2 teaspoons minced fresh ginger root

1/4 teaspoon crushed red pepper flakes

2 tablespoons good red wine vinegar

1/4 cup light brown sugar, packed

2 tablespoons soy sauce

1/2 cup smooth peanut butter

1/4 cup ketchup

2 tablespoons dry sherry

1 1/2 teaspoons freshly squeezed lime juice

Cook the olive oil, sesame oil, red onion, garlic, ginger root, and red pepper flakes in a small, heavy-bottomed pot on medium heat until the onion is transparent, 10 to 15 minutes. Whisk in the vinegar, brown sugar, soy sauce, peanut butter, ketchup, sherry, and lime juice; cook for 1 more minute. Cool and use as a dip for Grilled Lemon Chicken skewers.

Yield: 1 1/2 cups

The history of meal times (and number of meals consumed) makes for fascinating study. These differ greatly from culture to culture and through time. They also depend upon the socio-economic class of the person who was eating. If you are studying the meal times of a specific place/people/period please let us know. "Meal times are variable, but a midday meal was usually called ariston lunch... and an evening meal deipnon, dinner. The latter was perhaps typically the biggest meal of the day, and for some the only meal."

ABOUT BRITISH MEALTIMES (overview)
"In the beginning of the sixteenth century in England, dinner, the main meal of the day, used to begin at 11:00AM. Meals tended over time to be eaten later and later in the day: by the eighteenth century, dinner was eaten at about 3:00PM...By the early nineteenth century, lunch, what Palmer in Moveable Feasts calls "the furtive snack," had become a sit-down meal at the dning table in the middle of the day. Upper-class people were eating breakfast earlier, and dinner later, than they had formerly done...in 1808...dinner was now a late meal and supper a snack taken at the very end of the day before people retired to bed. Anglo-Saxon period
"Taking meals at regular times was seen a good thing in moral terms: every mouth needs food; meals shall take place at their proper time'...Gluttony consisted of eating before the time of the meal, as well as taking too much. Regular mealtimes seem to have been seen as evidence of an ordered, civilised life. Morever, in large establishments, serving meals at set hours would have saved time. Punctual meals were particularly important in monasteries where the offices had to be observed. When meals were taken, or even how many meals a day there were, varied according to the calendar, social class, and personal preference. The novice of the Colloquy seems to eat first soon after midday...The Regularis Concordia mentions the prandium ad sextam at noon, and a cena between Vespers and Compline allowed daily from Easter until Whitsun. From Whitsun until September 14 (apart from certain fast days which included Wednesdays and Fridays) and on all Sundays and feasts of twelve lessons there were also two meals a day but the prandium was not taken until none (3 p.m.). A single meal ad noman between Nones and Vespers was the rule for the winter period from September 14 to Lent; in Lent and on Quarter Tense days the one meal was ad vesperam (after Vespers). So it appears there was a main, midday meal, though this might be put back to mid-afternoon, or later, for which the term was ge-reordung or non-mete. According to the Old English Rule of Chodegang, if preostas ate twice a day then it was a midday and evening, and at Aethelwold's monastery the monks had dinner and supper...An ealier meal than dinner or supper is referred to--the undernswoesendum. Medieval era
"...what were the mealtimes and how often did people eat a day? The very poor doubtless ate when they could, but the slightly better-off peasants seem generally to have eaten three times a day. These meals consisted of breakfast at a very early hour to allow for dinner at about 9 a.m., or not later than 10.00 a.m., and supper probably before it got dark, perhas at 3.00 p.m. in the winter. The times and number of meals were originally derived from the hours of devotions of the Church. Monks ate the main meal of their day after the celebration of nones, which was nine hours after daybreak. This was in practice at some time between midday and 3.00 p.m. The evening meal had to be a reasonable time after this, at or after vespers (around sunset). Three meals a day were accepted as reasonable by most later sixteenth-century writers, such as Andrew Borde, although he thought that this was only good for the labouring man: anyone else should be content with two. It has been suggested that breakfast was only eaten by children and workmen, but certainly by the fifteenth century it was quite commonly taken by everyone....although the 1478 household ordinance of Edward IV specified that only residents down to the rank of squires should have breakfast, except by special order...The time was only specified as a 'convenyent hower', although to break one's fast after devotions was the generally recommended procedure. Earlier reference to breakfast sometimes meant dinner, literally, in these cases, the first meal of the day. Sir William Harrison thought that in previous times (not specified) there had been four meals eaten a day, that is breakfast, dinner, nuntions (or 'nuncheons', taken about noon) and late supper. Nuncheons was usually something eaten by workmen who were given payment for it...Edward Prince of Wales (son of Edward IV) probably dined at 11.00 a.m....and supped at 5.00 p.m....The staggering of meals in large households, with the servants eating earlier than the lord...was common."

Renaissance period
"...what time to eat? Should the midday meal or evening meal be larger? Entire books were composed on this very topic. Medieval theorists, and common custom through the Renaissance, favored the "prandium," or dinner, at ten or eleven in the morning, as the larger meal. Digestion, it was thought, is fortified by movement and the heat of the sun...authors, armed with a purified Galen and other Greek authors, promoted the larger "coena," or supper, at around six in the evening. They argued that distribution of humors and spirits, the third stage of digestion, is stronger during the day, but concoction is much stronger when the mind and body are at rest...Most authors agreed that two meals are sufficient, although some Arabists favored three meals in two days or food every sixteen hours. The English vehemently defended their custom of taking breakfast. Most agreed in condemning the between-meal and late-night snacks, or "merenda" and "collations." The latter term originally referred to the light monastic meal at the end of the day, which derives its name from John Cassian's "Collations," which was read during the meal. It eventally came to mean all late-night nibbles or after-dinner dainties...Digestions, it must be remembered, was thought to proceed in distinct separate stages rather than one long continual process along the digestive tract. Thus, knowing how long each stage requires also reveals the ideal time to eat. A meal must not commence until the former meal has been thoroughly processed...Such a schedule would mean rising at 6:00, dining from 10:00 to 11:00, supping from 6:00 to 7:00, and sleeping at 11:00."

Early modern Europe
"One detail that comes primarily from literary evidence is the time of day when meals were customarily taken. This was acutally a matter of debate among dietary writers in the sixteenth century, but most of the deferred to the authority of ancient authors like Galen and recommended two meals per day. The first smaller meal, dinner, should be taken at around 11:00 a.m., and a larger meal, supper, follows six hours later at around 5:00 or 6:00 p.m. These authors reasoned that since the digestive powers are stronger during sleep when the digestive heat is withdrawn inward, and because there are more hours between the evening and morning meal, that supper should be larger. These recommendations follow ancient practice, and concide with early modern custom in Spain and some parts of Italy like Venice and Genoa. But the rest of Europe followed a different pattern--eating the larger meal in the late morning and smaller meal in the evening. The evidence for this comes foremost from literary descriptions of meals that usually take place mid-day. Even in the vast majority of cookbooks that offer menus, the grander meal was held at mid-day...What is clear is that meal times gradually shifted, dinner being held later and later in the day. In the sixteenth century dinner was held around 11:00 a.m. By the seventeenth century it had crept to 12:00 or 1:00 p.m. Samuel Pepys, the seventeenth-century English diarist, recorded several dinners he ate at 12:00 replete with heavy drinking. In the eighteenth century fashionable dinners, and the gentry and business classes in the cities who sought to imitate them, ate dinner later and later in the afternoon...Actually the usual dinner time was 2:00 or 3:00 p.m. by mid-century and by the late eighteenth century it was perhaps as late as 4:00 or 5:00 p.m. Only in more recent times has it come to rest in the evening, when supper consequently became less important. This development necessitated the invention of a new mid-day meal, lunch, which only became standard at the very end of the eighteenth century. Even more elusive is evidence for breakfast. Judging from cookbooks and dietary literature there was no such meal, or at least it was only recommended to children, invalids and the elderly who have weak digestive systems and must eat smaller meals more frequently. Nevertheless, there was such a meal, and some people took it regularly...What appears to have happened is that as dinner moved later in the day, people were hungrier first thing in the morning, especially when the evening meal was relatively small. In countries where the evening meal was larger, breakfast did not become important. In southern Europe it is still not a proper meal, but merely coffee and perhaps a piece of bread or pastry. In England and the north the pattern was quite different...By the eighteenth century breakfast...was eaten around 9:00 or 10:00 in the morning. Only in the nineteenth century did it emerge as a full and sumptuous meal with bacon, eggs and even steaks. Thus the three-meal-a-day pattern we are familiar with is a relatively recent phenomenon. The English afternoon meal called "tea" as a snack between lunch and dinner also did not emerge until the nineteenth century...This kind of evidence of course only relates to the meal patterns of the upper classes. From the comments of dietary writers who usually disapproved of common custom, it is certain that laboring people ate many more meals, usually a breakfast, dinner in the mid-morning, some form of snack at sundown and then a small supper late in the evening. This pattern also persisted despite the shift in meal times among elites."

ABOUT AMERICAN MEALTIMES

"American meal patterns over the past four centuries have varied across different regions of the country and have been determined by an individual's occupation, social class, gender, ethnicity, and personal preferences. Seasons, holidays, and the weekly round of activities also played a part in determining what is eaten when. All meals, whether served at home or in a restaurant, are structured events...In colonial times, American meal patterns followed European practices, in which the extended family participated in meals, which occurred three times a day; the standard meals were breakfast, dinner, and supper. Colonial American mealtimes

Early 20th century USA

Mealtimes, and meal titles, at the turn of the 20th century were a reflection of social status, not location. Wealthy folks emulated the latest British etiquette while farm families and poorer folks stuck to the traditional agrarian standards. Folks living in institutional settings (military, hospitals, schools, prisons) ate according to regulations. For example: A wealthy person's dinner party would commence anywhere from 6-8PM, while a mid-western farm family might be sitting down to dinner (their main meal of the day) at noon. The wealthier you were, the later (and longer) the breakfast. Lunch cut across all social classes at this time. Priviledged ladies entertained each other with fancy luncheons while factory workers and school children chowed down sandwiches in brief, prescribed breaks. Regardless of time and place, the general distinction between dinner and supper is the former indicates the main meal of the day; the latter is a light repast. If you took your dinner at noon, you supped at 5 or 6. If you took your dinner at 8, you might sup at 11. Period etiquette books were written for the wealthy and upper middle classes. Meal times and dining notes generally address social occasions rather than family (informal) meals. General notes here:

Formal dinner at 8PM (p. 6); "Formal luncheon is served as a rule at one, half-past one, or two o'clock--not later than the latter hour, lest it spoil the guest's appetite for dinner." Appetizers & hors d'oeuvres

Appetizers, hors d'oeuvres, starters, antipasto, gustus, tapas, maza, mezze, zakuski, dim sum, smorgasbord...small foods served before meals to whet the appetite play integral roles in many cultures and cuisines. Offerings and traditions developed according to regional taste. It is important to note that appetizers were not part of all menus through time. In many cuisines this is a relatively recent practice. This explains why there is no such thing as "authentic" colonial American appetizers; only creative adaptations based on period recipes.

"...many of the great cuisines of the world -- Chinese, Japanese, Middle Eastern, Spanish, French and Italian, just for starters -- have long recognized that dawdling over small servings of many different dishes, sharing tidbits and discoveries, not only stretches out a pleasant social evening but bonds friends together in a very emotional way. In fact, the very word "companion" comes from the Latin com panis, or "with bread," meaning the person you share meals with -- friendship defined by dining...The most familiar versions are Middle Eastern mezze and their Spanish derivatives tapas; Chinese dim sum (meaning, sweetly, "touch the heart"); French canapes and hors d'oeuvres (themselves derived from the Russian zakuski); and Italian antipasti. In Vietnam, such drinking dishes are called "do nhau" -- literally, "little bites," and sounding not unlike "doughnut." Antipasto?
Antipasto denotes the dishes served before (anti) the pasta (pasto) course. These are often similar to those served for gustatio. Antipasto is also more broadly defined as 'before the meal,' referring to all food served as appetizers. Alan Davidson's Oxford Companion to Food states: "Typical itmes are olives, pieces of raw or cured ham, marinated mushrooms or other vegetables, and items of seafood. As the popularity of Italian food increased in the second half of the 20th century this term acquired wide currency in English" (p.22)

"Appetizers, called 'maza' in Arabic, constitute one of the glories of this ancient cuisine. "Cold and Hot Hors-d'Oeuvre
The name of these types of preparation clearly defines their place in the menu. They are adjuncts, and if omitted from the menu should not alter the general harmony of the meal, especially where dinner menus are concerned. It is therefore indicated that they should be composed of light items of a delicate nature and they should not constitute a complete dish in themselves. But if these items are any less in terms of quantity they should be compensated for this by being of an excellent taste and by giving careful attention to the presentation--both of these should be above reproach. There are two types--cold Hors-d'oeuvre and hot Hors-d'oeuvre--each being entirely different from the other, both from the point of view of preparation and service...As a general rule cold Hors-d'oeuvre are suitable only in a meal which does not include a soup...However, this rule is not always observed especially in a la Carte restaurants; it is a means more usually of serving de-luxe Hors-d'oeuvre such as caviare, oysters, plovers' eggs etc. which do not have an undue influence on the digestion as would be so in the case of fish, salads and marinated vegetables. What about Victorian appetizers?
According to The Cassells' New Universal Cookery Book, Lizzie Heritage [Cassell and Company:London] 1894, the British were not completely committed to the idea of hors d'oeuvres.

SWEDEN
Sweden's traditional smorgasbord offers guests a variety of small foods presented on a common table. It can be complicated (with courses) or simple (small foods meant as appetizers). Guests are invited to help themselves to whatever pleases them. Smorgasbord relates to the American "cocktail hour" in that these foods are typically offered with alcoholic drinks, similar to hors d'oeuvres.

"Smorgasbord. The best-known feature of the cuisine of Sweden, is related to the Russian Zakuski and also to Hors D'oeuvres and Mezze, but less closely to Tapas. It assumed something like its present form in the course of the 19th century, following old traditions of placing all foods on the table at once and of guests bringing their own contributions. Nowadays, it is usually prepared by the hostess, without contributions, and consists in an assortment of cold dishes, cometimes supplemented by hot ones, served either as the preliminary to a meal...or as a full buffet meal. The literal meaning of the term is buttered-bread table', which might lead one to expect an array of open sandwiches. In practice the various savoury items (cured herring in various forms, other seafood delicacies, cold meats, various salads, and cheeses) are presented with various Swedish crispbreads or the like, and only a few items, if any, would appear as miniature open sandwiches. When smorgasbord is a full buffet meal, a typical sequence of course' would be herring (always first); other seafood items such as gravlaks; what are called small warm dishes'...cold meats and the like; cheese/fruit/light dessert."

About Swedish smorgasbord in the United States

"Smorgasbord. A buffet meal of Swedish origins that has become in this century a very popular party spread. The word...first appeared in American print in 1893. The idea soon caught on, so that by 1941 the West Hartford Ladies Aid Society Swedish American Cook Book listed several suggestions for a smorgasbord, including the following items: butter balls, Swedish rye bread, pumpernickel, hardtack, pickled herring, baked ham, smoked tongue, lingonberries, radish roses, omelets, "Rulle Pulse" (rolled pressed lamb), "liver pastej" (liver paste), jellied veal, head cheese, hot Swedish meatballs, Swedish pork sausage, brown beans, Swedish fish pudding, smoked salmon, stuffed eggs, potato salad, "sill salad" (herring salad), meat and potato sausage, fruit salad, Swedish apple cake, and coffee with cream. " [The Fifties] While French cooking carried the most cachet (and was considered the most difficult), Scandinavian cookery--to go with the plethora of blond Danish Modern furniture and bright -colored Dansk pots decorating the chicest homes--was In, In, In. And though Scandinavian restaurants were popular...Scandinavian food was most often found a buffet parties. For what could be more modern, more chic, more fun, and easier, than a smorgasbord at a party? The custom among Continental nations of commencing dinner with some savory plate, which shall stimulate a jaded appetite or serve as a whet to the palate, is gaining ground, probably more in deference to fashion than from individual requirement. As to the wisdom of the practice, much difference of opinion exists. On the one hand, it is asserted that such dishes are injurious, where appetite and digestion are lacking, and that given a good appetitie, they are quite unnecessary; while on the other, it is urged that they are in many cases of real benefit. Various potted meats, fish pastes, and butters, play an important part in the garnishing of the dishes. Many small savouries which would also be served as Hors D'Oeuvres will be found under that and other headings later on...." (p.21)

Whole-Grain Pasta with Chick Peas and Escarole

Ingredients

  • 2 cups whole-grain penne
  • 1 head escarole, roughly chopped
  • 4 tablespoons extra-virgin olive oil, plus more to taste
  • 1/4 cup capers, drained and patted dry (optional)
  • 5 cloves garlic, sliced
  • 1/2 cup roughly chopped fresh parsley
  • 1/4 teaspoon red pepper flakes
  • 1 28-ounce can whole peeled tomatoes, crushed slightly,
  • liquid reserved
  • 1 15.5-ounce can chickpeas, drained, rinsed and patted dry
  • Kosher salt and freshly ground pepper
  • 2 bay leaves
  • 1/2 cup freshly grated parmesan cheese, plus more for garnish

Directions

Cook the pasta according to the package directions; add the escarole during the last 2 minutes, cover and do not stir. Remove the escarole with tongs; set aside. Drain the pasta, reserving 1/2 cup cooking liquid. Meanwhile, if you're using capers, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the capers and fry until crisp, about 2 minutes. Transfer to a paper-towel-lined plate.

Add the remaining 3 tablespoons oil to the skillet. Cook the garlic, parsley and red pepper flakes until the garlic toasts slightly, 1 minute. Add the tomatoes, chickpeas, a pinch of salt and the bay leaves. Cook until the tomatoes and chickpeas brown, about 6 minutes. Add the escarole and reserved tomato juice and cook until the sauce thickens slightly, about 4 more minutes. Remove and discard the bay leaves.

Add the cooked pasta to the skillet and toss with the sauce; season with salt and pepper. (If the sauce is thick, add some reserved pasta water.) Stir in the cheese and top with fried capers, if using, and more cheese.

Chicken and Dumplings

Ingredients

Chicken:

  • 1 (2 1/2-pound) chicken, cut into 8 pieces
  • 3 ribs celery, chopped
  • 1 large onion, chopped
  • 2 bay leaves
  • 2 chicken bouillon cubes
  • 1 teaspoon House Seasoning, recipe follows
  • 1 (10 3/4-ounce) can condensed cream of celery or cream of chicken soup

Dumplings:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • Ice water

Directions

To start the chicken: Place the chicken, celery, onion, bay leaves, bouillon, and House Seasoning in a large pot. Add 4 quarts of water and in water and bring to a simmer over medium heat. Simmer the chicken until it is tender and the thigh juices run clear, about 40 minutes. Remove the chicken from the pot and, when it is cool enough to handle, remove the skin and separate the meat from the bones. Return the chicken meat to the pot. Keep warm over low heat.

To prepare the dumplings: Mix the flour with the salt and mound together in a mixing bowl. Beginning at the center of the mound, drizzle a small amount of ice water over the flour. Using your fingers, and moving from the center to the sides of the bowl, gradually incorporate about 3/4 cup of ice water. Knead the dough and form it into ball.

Dust a good amount of flour onto a clean work surface. Roll out the dough (it will be firm), working from center to 1/8-inch thick. Let the dough relax for several minutes.

Add the cream of celery soup to the pot with the chicken and simmer gently over medium-low heat.

Cut the dough into 1-inch pieces. Pull a piece in half and drop the halves into the simmering soup. Repeat. Do not stir the chicken once the dumplings have been added. Gently move the pot in a circular motion so the dumplings become submerged and cook evenly. Cook until the dumplings float and are no longer doughy, 3 to 4 minutes.

To serve, ladle chicken, gravy, and dumplings into warm bowls.

Cook's Note: If the chicken stew is too thin it can be thickened before the dumplings are added. Simply mix together 2 tablespoons cornstarch and 1/4 cup of water then whisk this mixture into the stew.

House Seasoning:

  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.

Yield: 1 1/2 cups

1 1/2 ounces Irish whiskey
2/3 cup freshly brewed strong black coffee
1 tablespoon heavy whipping cream

Combine the sugar whiskey, and coffee in an Irish coffee glass. In a small bowl, lightly whisk the cream until slightly frothy. Gently pour the cream onto the back of a spoon resting on the surface of the coffee, so that it floats on top of the coffee. Serve without stirring.

Hot hint: Getting the cream to float on top of an Irish coffee may require a little luck of the Irish. To ensure success, don�t omit the sugar, even if you don�t typically take it in your coffee, and remember not to stir in the cream, as the secret to experiencing the true flavor of an Irish coffee is sipping through the floating cream.

In this article I would like to talk about an approach to health that I have picked up over the years and it has really served me well. It is something that not many people know about and if they do, it is not discussed very much. As we know, the raw food path is a journey.

It's a journey because not only does it take time (for me it took about 5 years) to beat down your insatiable cravings for cooked and processed foods, but it's a journey that you take on intellectually as well. So in the journey of eating a raw food diet, we read all the books we can, we read all the websites, blogs we can. Basically we soak up as much information as we can.

As time goes on the transformation is immense. Our transformation is like waves crashing against a cliff. If you see the side of the cliff dropping into the ocean one day and come back the next day, the cliff looks no different. But if you come back in 5 years, the cliff is completely different. It is the same with us, the more information we take in each day and end up applying, over time we change immensely. We become somebody totally and radically different. The process is natural and it takes time. Not only all of that but it's fun too.

The information, ideas and practices that we end up learning and applying become like stepping stones stacked one on top of the other. I've heard it said that the best ideas are always up high.

You need to read the books to be able to stand on top of them to get at the best ideas. So as we apply these practices and lifestyle choices, what we are really doing is stacking the odds in our favor.

I've heard people say over the years that "oh this can of coke won't kill me" or "it's not a big deal it's just a slice of pizza." Notice the focus of words and intention here. It's "won't kill me" or "just a slice" it's never focused on the positive. For example, they are not saying "this can of coke is going to help you be the person you want to be" or "this slice of pizza is not going to help me reach my goals." I digress. Usually the focus is on the negative of the little amount of harm that cooked food will do to a person instead of asking how this food is going to benefit me to become the person I want to become.

What I'm talking about is small choices, and as they stack up, they become who we are. Stacking the odds in your favor is getting yourself and your health to a place where you can overcome any disease. Personally I like to focus more on where we're going verses what disease we need to overcome but if there is a disease that needs to be overcome, stacking the odds in your favor is critical.

Now what does stacking the odds in your favor mean and what does it not mean? It does not mean that any "one" thing will heal you of a disease. Let's say for example you have cancer. If you're interested in alternative cancer treatments you can checkout that post. I look at stacking the odds in your favor a bit like play the game tug-o-war. Imagine you're playing the game and each side has 10 people and there is a pool of water in the middle. Let's have this pool of water represent cancer. The one side is your health and immune system, the other side is toxicity, sugars and all the imbalances that play a role in cancer. So by changing your lifestyle, habits, your thinking, your diet, your exercise routines, your stress levels, your friends, your influences (what you allow in), your cravings and all the rest of it, you all of a sudden have added about 10 more players to your team. And not only that, but the push pull components of this game of tug-o-war is finite. So what you have added to the "health" side of your team has now been subtracted from the "toxicity" team.

If you make all of these changes and "add 10 more players to your team" then it gets really difficult to say one way or the other than any "one thing" caused you to overcome cancer. But more accurately, it allowed you to take a more holistic lifestyle approach and stacked all the odds in your favor.

Now what are some of the practices you can take to stack the odds in your favor on a daily basis? Perhaps you have cancer or perhaps some other disease or maybe you just don't want to end up with these diseases. What are some things you can do to stack the odds in your favor? Making smoothies
Wearing a zapper
Adding lemon, sea salt, msm, sea minerals to a morning water
Getting lots of sleep
Doing yoga
Walking, running, biking, swimming or some form of cardio
Going to the gym
Eating more raw foods
Eating super foods
Meditating and praying
Taking 30 slow deep breaths per day
Drinking more water each day

Ingredients :

1 lb. flank steak

15 pieces ginger (quarter large)

15 pieces green onions (about 1" long)

2 Tablespoonful cooking oil
4 cups cooking oil ½ lb. Chinese broccoli
½ Tablespoon rice wine

½ teaspoonful salt

1 teaspoonful sugar
Seasoning

For the Sauce :

2 Tablespoonful oyster sauce

1 teaspoonful sugar
½ teaspoonful cornstarch
½ teaspoonful sesame oil

1 Tablespoonful water

For the Marinade :
½ teaspoonful baking soda
1 Tablespoonful cornstarch

1 Tablespoonful soy sauce
1 teaspoonful sugar

3 Tablespoonful water

Cooking Directions :


Slice the beef thinly and cut into 1"x2" pieces,
Place them in a bowl and marinate for at least ½ hour (the longer, the better taste)

Add in 2 Tablespoonful of cooking oil and mix well prior to cooking.


Boil the Chinese broccoli in boiling water for about 2 minutes (don't over boil cause it'll reduce the health nutritions)
Remove it from the water using a colander

Stir fry the Chinese broccoli with 2 Tablespoonful of cooking oil
Season with wine (optional), salt, and sugar, (taste it if necessary)
Lay neatly on a serving plate.


Heat 4 cups of cooking oil in the wok
Add the beef and stir fry for about 10 seconds, or till its color turns light .
Remove the beef and drain off the oil.


Use another 2 Tablespoonful of cooking oil to stir fry the ginger and green onions
Add the beef, and stir quickly over high heat.

Add the seasoning sauce, Stir till it's thickened and heated through.

Pour over the Chinese broccoli
Serve hot

Soft Pretzels Recipe

(Makes 12 large pretzels or 24 sticks)

Ingredients :

1 packet active dry yeast (scant tablespoon)

1 C. warm water (115 to 120°F. -- NOT boiling)

2-3/4 C. flour

1 T. sugar

1/2 t. salt

2 T. vegetable oil or softened butter

4 C. water

2 T. baking soda

2 T. coarse salt



Cooking Direction :

Add yeast to warm water; let sit 5 minutes.


Combine 1-1/2 cups flour, sugar, salt and oil in a large mixing bowl.
Add yeast mixture and stir until well-combined.
Add remaining 1-1/4 cups flour.

Knead dough 3 minutes; form into a ball.
Let sit 1 hour. Dough should double in size.


Divide dough into 12 pieces and roll each piece into a ball (dust hands with flour to prevent sticking).

Place balls on a cookie sheet or lightly floured surface. Let rest 15 minutes.

Roll each ball into a 16-inch length and form into a pretzel shapes.
Or, divide each ball in half and roll each half into a 3-inch stick, about 3/4-inch wide. Let rest a few minutes.


Meanwhile, preheat oven to 475°F.
Grease a large cookie sheet. In a non-aluminum pot, bring remaining 4 cups water to a boil with baking soda.


Add pretzels to the boiling water in batches (do not crowd pot) and boil 1 minute, turning once.
Shake off excess water.
Place pretzels on cookie sheet and sprinkle with coarse salt.

Bake 10 minutes, until golden brown. Best eaten right out of the oven

Leek Potato Soup

Ingredients

  • 1 pound leeks, cleaned and dark green sections removed, approximately 4 to 5 medium
  • 3 tablespoons unsalted butter
  • Heavy pinch kosher salt, plus additional for seasoning
  • 14 ounces, approximately 3 small, Yukon gold potatoes, peeled and diced small
  • 1 quart vegetable broth
  • 1 cup heavy cream
  • 1 cup buttermilk
  • 1/2 teaspoon white pepper
  • 1 tablespoon snipped chives

Directions

Chop the leeks into small pieces.

In a 6-quart saucepan over medium heat, melt the butter. Add the leeks and a heavy pinch of salt and sweat for 5 minutes. Decrease the heat to medium-low and cook until the leeks are tender, approximately 25 minutes, stirring occasionally.

Add the potatoes and the vegetable broth, increase the heat to medium-high, and bring to a boil. Reduce the heat to low, cover, and gently simmer until the potatoes are soft, approximately 45 minutes.

Turn off the heat and puree the mixture with an immersion blender until smooth. Stir in the heavy cream, buttermilk, and white pepper. Taste and adjust seasoning if desired. Sprinkle with chives and serve immediately, or chill and serve cold.

Raw Food Transition

Taking it slow...
There are many ideas of how to transition to a raw food diet. Many people like to transition in a fast way. They hear all the great results that you can get (and there are many) so they decide to jump right in and go 100% raw overnight or in a week. There really is no right or wrong way to transition. But in my opinion if you are 100% dedicated to doing this type of diet for any length of time, then there is no rush, and you should take it as slow as possible. If you're in a healing crisis like cancer you unfortunately, don't have this luxury.

Why is it better to transition slow rather than fast for most people?
Transitioning to a raw food diet is not easy for your mind or your body. The current diet that we had before going raw was probably in the least, about 20 years old. That means even if we got into raw foods at a young 20 years old, that's still fighting against 20 full years of our relationship with food. Assuming two people were in love, do you think a person who was in that relationship for 20 years could overnight start a brand new relationship without any emotional issues? It's just not possible. Many times the best thing for a person that is getting out of a long term relationship is to just be alone for a while. Why is that? Most likely because they need to see what life is like without that person. Food is no different. Everyday we have eaten all our lives, it has left its imprint on us whether we like it or not. Just ask anybody who has an eating disorder or a person who has food addictions. The longer a person has gone eating the traditional diet, the longer they should take to transition.

By taking it slow, you're also giving your body a chance to recalibrate itself when needed. We all need to find a new level of homeostasis every time we make changes. Don't get me wrong, it is possible to change overnight, people have done it. I'm just telling you what has worked for me. If you set a long term goal, years out for example, that you're one day going to be all the way raw then this is the best approach.

Because we've abused our bodies for many years we have low hydrochloric acid levels in our bodies. Because of this it's not easy to break down the roughage and fiber that comes in when we start introducing raw foods into our new diet. If we suddenly shock the body, we start feeling sudden symptoms of detox. The food is not being broken down and upsets our stomach etc. Also when people transition too fast they sometimes swing back and forth. They'll be 100% raw for a week and then eat no raw foods the next week and it becomes this pendulum swinging back and forth. We're moving towards the slow and steady approach.

As you are changing your current diet, your body will pull minerals out of your body to keep itself in balance and a sudden change can be too much of a shock for most people. Be kind to your body. You don't like waking up to an alarm clock do you? It's a shock to wakeup that way and not very natural. So give your body time to readjust itself over the long term. Thinking long term will help because you won't be focused on things like weight gain or weight loss or any of the other things that we think about for right now. You're in it to be healthy and you're in it for the long term and long term health.

It's all about small changes that you can get used to and being okay with whatever level or "rawness" that you achieve. I never thought to myself that I'd be 100% raw one day. I just new I wanted to start eating healthier and it just happened by accident really. I never tried to do it. That may sound strange. I never struggled. I never felt hungry all the time. I never felt detox and it was always fun. It took me 5 years to get to 100% raw. I was addicted to meat, sandwiches, pizza, burgers and my all time favorite, the chocolate chip cookie.

So how did I do it?
Well my first goal was to clean up my breakfast habits. I used to wake up starving. Now I wake up and can go till 4pm on just water and not even feel hungry. I'm telling you, your stomach changes and your need for food diminishes unbelievably. We eat because our body wants minerals. We can get them in half the amount of foods now that we eat raw. In any event, I read Fit for Life and decided to eat fruit until noon. But I was addicted to my two bowls of cereal and peanut butter toast. For a week I just ate 1 piece of toast. Then I'd have only 1 bowl of cereal with one piece of toast for a few weeks. Then I'd just have cereal. Then I did the fruit until noon trick and just did that and only that for a good year. I didn't care if that's all I ever did. But at that point I signed up for thebestdayever.com and started learning more and reading more raw food books. Tip: Learn as you go and experiment in the kitchen as you transition as well. There are a lot of great raw foodists out there. I've learned a lot from Daniel Vitalis and the Raw Vegan Radio Show.

At this point I thought I'd tackle lunch. I'd eat a salad with my turkey sandwich and chocolate chip muffin. But hey, my lunch meal was now 50% raw! Then I'd have a veggie sandwich with my muffin and salad for 6 months of more. Then for a good year I was raw at breakfast AND lunch, amazing. Then again at that point if that's all I ever did I was happy with that. No struggle, no addictions, no stress. It was easy as can be. Then I thought...."hmm if I can take care of dinner that's the whole show!" Then it took me a long long time to tackle the dinner issue and I'm telling you, it was the easiest way to transition ever.

What was my approach?
Fruit only for breakfast
Salads with lunch and dinner
A daily green juice and/or green smoothie if I had time.
Then all the cooked food I wanted, as long as I did the above things each day.

If that's all you did, you'd be eating healthier than just about any average American. Just imagine if all you did was have a green smoothie for breakfast for the next 20 years instead of bacon, eggs, hash browns and cereal. That one change alone saves your body 7,300 toxic meals. Isn't that amazing? If it takes you 5 years to transition to 100% raw", don't you think that is better than going on the seesaw diet constantly going back and forth struggling and fighting addictions? In the grand scheme of things taking 5 years to change 20 years of habits isn't so bad.

In order to do the whole show all the way you really have to have a mindset that this is what your eating program is going to be about. But it's really not important to be 100% raw or 90% and count percentages here and there. The point is just to keep adding and introducing healthier foods into your diet.

What do you do about addictions?
Having a sugar addiction is no fun, or any addiction for that matter. If you’re transitioning, just slowly lower the number and amounts of bad things you eat. For example, if you're craving 5 fresh out of the oven chocolate chip cookies, then tell yourself you can eat them only after you have a green juice before or perhaps a nice fresh salad, and try to eat only 4 instead of 5. The key is making yourself eat the salad first and then have the cookies. And be happy with that. No big deal. Pretty soon, and before you know it, you'll be eating a nice balanced healthy diet without even trying. Remember don't focus on avoiding foods, focus on adding the good stuff. More toward things, not away from things.

No struggling, no addiction and no effort. Make it easy and make it fun. Life is about way more than food anyway.
